Rum distilled at Jamaica's Clarendon Distillery is transported to the cooler climate of Scotland, to rest up in the warehouses of GlenAllachie. High, medium, and low ester rums are initially matured in a combo of American and French ex-rye, ex-Rioja, and virgin oak casks, before being cleverly blended. The rum was then filled into a cask that previously held GlenAllachie's own peated Scotch whisky, imparting layers of woody smoke and barbecue spice to the ester-rich rum within.
